Hunter Valley Semillon is one of the most unique, often underrated, and long lived wines in the wine world. This fascinating style is vinified in stainless steel when the grapes are slightly unripe and still retaining acidity. The wines are almost undrinkable in their youth but after 4-6 years something amazing happens. They totally blossom into a honeyed, delicious idiosyncratic expression of the variety. This particular wine shows classic aromas of dried hay, eucalypt honey, cashew nuts and fresh bread. The palate is medium bodied and the uninitiated would swear the wine had seen oak barrels, although none were used. Drink now to 2022.
