This wine comes from the flinty and calcareous soils on the outskirts of Sancerre, Touraine in the Loire Valley. Pascal Jolivet is a true master at letting Sauvignon Blanc express itself in this unique region. The wine is fermented with wild yeasts in stainless steel and produces a wonderfully pure example of this top varietal. The aromas show notes of citrus, lemon peel, flint and fresh cut herbs. The palate is medium bodied, with a focused clean and racy intensity and a long dry finish.
