Dandelion Pedro Ximénez (NV) Barossa Valley, South Australia

This amazing fortified wine is made from vines over 80 years old aged in a traditional solera system. It is a nod to a different time where things were slower, and wine was allowed to age at a pace that suited the palate rather than the accountant. The wine is rich and luscious with notes of raisins, dried apricots, rancio, toffee and almond cookies. The wine has uncommon length and persistence. Try as an aperitif or with good quality hard cheeses such as Parmigiano or Aged Cheddar. Drink within a week of opening, now to 2030.
